With CSS, you can use an image as a header (ex. an <h1> tag). You do this by putting a <span> inside the header tag and then define the CSS for that image to have a certain image background.
This way you get the best of both worlds: a pretty image header and a textual header tag that web spiders can read.
However, this is a time-consuming task, especially when you have a fairly large site.
So how much is this worth as far as SEO goes? Is it worth doing for anything over, say, a 5-10 page site?

It would depend on where the site is and where it currently stands. In most cases, smaller sites rank for more niche terms and a change like this could have somewhat of an effect, depending on the keywords. I can tell you right off the bat that Google will not care too much about this. Lesser search engines like Yahoo and MSN are more likely to give it some credibility but it is still such a small measure that it would have very little weight. If you are hanging around position 2 or 3 and are looking for the extra bit to push you to #1 you may want to give this a go, otherwise I would say don't bother.
