Because of the low level of competition in the market place a niche site will usually rank relatively quick. Since there are not many sites competing for these niche terms Google doesn't sandbox you as long as they would with more competitive terms.

A niche is very targeted

Why does this matter you ask? Simple, you know exactly what your users are into so you know exactly what to provide them. This higher level of accuracy greatly increases aspects of the site such as conversions and interaction. People like to talk about and buy things that are related to their unique area of interest.

Low risk

Okay, so you messed up and your site sucks. Now what? Learn from your mistakes and move on. A niche site usually requires much less time and commitment than broader site and because of that, is much less risk.
